Today we're highlighting one of our favorite, feel good, low carb meals: LCHF Chicken Parmesan

This is a totally classic, Italian dish with a traditionally high carb content. At 518 Kitchen, we're all about making comfort food classics low carb. Here's how we spun this classic into a low carb high fat, delicious dinner staple.

 

Chicken Parm is known for being cheesy, saucy, and sometimes a little crispy when the breading is just right. But as those living any sort of low carb life know, chicken parm doesn't always fit the macros. This is for a few reasons: the bread crumb breading and the sugar from a sweet tomato sauce. Especially if you're not making the dish yourself, it can sometimes be hard to tell just how much you're getting in serving.

We decided to start our version with high quality, antibiotic-free, skin-on chicken. This juicy boneless chicken thigh is the star of the dish. We swapped high carb breading for a low carb version: crushed pork rinds and Parmesan cheese. After the chicken is coated it's oven roasted until crispy. It's topped in a classic sauce made with San Marzano tomatoes. We think this chicken parm is a game changer for the low carb life- it's cheesy, juicy, savory, and doesn't feel like a low carb meal.

For sides-

We paired it with our cheesy creamed spinach to complete the tasty low carb combo. It makes the hearty meal feel comforting, and home made. This spinach side is made with two types of cheese: mozzarella and cream cheese.

How to enjoy-

Hot and fresh out of the oven! We prefer the oven to microwave for heating because it gets the cheesy/pork rind crust nice and crispy and cheese bubbling. Preheat your oven to 350°F. Place tray on sheet tray or oven safe dish and cook for 20-25 minutes, stirring halfway through. Remove from oven and let stand for 1-2 minutes before enjoying!
